Best Beef Mac and Cheese Recipe
I almost didn't share this recipe today. For a few reasons. The first existence: it'south not the almost photogenic dish out there. In food blogger country, this is a cardinal sin. The 2d being: it'southward almost too simple (aka, not that exciting? My abiding fright). Another cardinal sin. The third being: cheesy beef macaroni is not exactly a novel idea. It'southward been done. A meg times. Heck, you can fifty-fifty buy a famous boxed version at the store. I wasn't sure if this recipe was worthy of the internet.
And then I came to my senses. This one-pot meal was simply too freaking delicious to not share with you guys. And besides, since when is EASY a bad thing?! I know I say this all the time, but you guys HAVE to make this for your family this night (or at to the lowest degree in the nigh future!). Voile! That brings u.s. to today. And this insanely succulent meal. We've got veggies, tomatoes, some spinach (a major win in my mom category), pasta, sauce, beefiness, and even some cheese all simmering away in a pot until it'southward flossy, thick, and homogenous…oh, and Delicious.
Not only did Kieran inhale this (much to my glee), just my hubby and I moaned and groaned over how adept it was right aslope him. This was 1 meal of leftovers we were happy to have all week long. So much then, that I've made this THREE TIMES in the past month. We can't go enough. It'due south just then Like shooting fish in a barrel! And comforting. And yummy.

- one tablespoon olive oil
- 1 lb lean footing beef
- i medium onion, finely diced
- 1 red bell pepper, finely diced
- 2 garlic cloves, minced or pressed
- 2 tablespoons lycopersicon esculentum paste
- Pinch of red pepper flakes (optional)
- 1 teaspoon dried Italian seasoning (or stale basil and oregano)
- ii teaspoons sugar (optional – I like to add a affect of saccharide when using lycopersicon esculentum paste)
- two cups baby spinach, lightly chopped
- 1 ½ cups milk
- two cups depression-sodium beef broth

- 3 cups dried macaroni noodles (or other short pasta)
- 2½ cups shredded cheddar or mozzarella cheese
